This ‘cheat’s method of cooking a roast chicken dinner has almost no prep time and is finished in under an hour, with no effort!
I love chicken drumsticks..in my mind they’ve got the best taste of any piece of chicken and they’re so cheap to buy. Not to mention they’ve loved by kids (and kids at heart!) as they’re so easy to pick-up to eat. So I’ve developed a range of chicken drumstick recipes that are super-easy, involve very little preparation time and just sit in the over for 45-50 minutes.
Sage goes beautifully with chicken, but in the Easy Recipe Tips world we rarely have time to find and prepare fresh sage…so out comes the ground sage leaves (thank you Masterfoods!). To prep this chicken just rub it in olive oil and sprinkle generously with ground sage.
The vegetables are so easy to do in the oven too. I like New/Baby Potatoes as they can just get a quick wash and you can skip peeling them. Just them into quarters so they cook faster and chunk your sweet potato, pumpkin, or whatever else you like to roast. Give them all a good sprinkle with oil and a lighter sprinkle of sage, then I like add some dried rosemary leaves. Tossing them in a bowl to do this step makes it all easier.
Simply throw into a deep baking dish with some unpeeled garlic and pop in the oven for 45-50 minutes (until cooked) at 180*c. Half way through give them a shake around to stop things sticking (or flip them over if you’re feeling enthusiastic) and then they’re done!
